Steak with Tarragon Butter Sauce
A stunning Steak with Tarragon Butter Sauce recipe from the Cook’s Diary.
Vegetable oil 1 tbsp
Butter 75g (3oz)
Ribeye steaks 2 at room temperature, seasoned
White wine vinegar 2 tsp
Egg yolk 1 medium
Tarragon sprigs 4, leaves finely chopped
Chips and salad to serve (optional)
Heat a heavy frying pan on high until smoking. Add oil and 25g (1oz) butter. Fry steaks for 2 minutes on each side. Put on two warm plates, cover and set aside for 2 minutes.
Whisk vinegar, egg yolk and seasoning in a small bowl. Melt remaining butter in a microwave on high for 1 minute until bubbling. Quickly pour onto egg mixture, whisking well until smooth. Put sauce back in microwave and cook for 10 seconds, whisk well, then cook for another 10 seconds for a thick sauce. Stir in tarragon.
Serve steak and sauce with chips and salad, if you like.
