Festive Glories is a decadent dessert recipe from the Cook’s Diary.
Double cream 150ml pot, softly whipped
Leftover Christmas pudding 200g (7oz), crumbled
Muscat or sweet sherry 8 tsp
Mandarins 4, peeled and divided into segments
Wild cranberry sauce 8 tsp
Stem ginger 2, cut into slivers
Pecan nuts 25g (1oz), chopped
With a hand-held electric whisk whip cream until softly whipped.
Divide half of pudding between 4 sundae glasses. Sprinkle 1 teaspoon wine in each glass.
Top with half the mandarin segments, add 1 teaspoon cranberry sauce and a good dollop of cream. Repeat, then decorate with ginger and pecans.
